The restaurant at Tacuba 28 opened in 1912 inside a seventeenth-century mansion that had earlier housed the Hospital del Divino Salvador, a refuge for mentally ill women run by Poor Clare nuns. The legend belongs to one of them, Sister María del Sacramento, daughter of the man who donated the building. An inmate is said to have become obsessed with her and killed her when his feelings were not returned. Ever since, staff and diners have described a nun in white gliding beneath the vaults, usually late in the evening near the kitchen and the corridor to the washrooms. She frightens no one — on the contrary, the cooks say she lends a hand at the pots, and that the famous mole tastes as it does because of her.
