A hooded Dominican friar walks between the kitchen and the bar at night — and is said to guard a treasure walled up long ago.

The city's oldest tavern, opened in 1860, occupies a house that once belonged to the Dominican monastery on Plaza de Santo Domingo. Staff have passed down the same figure for generations: a dark friar in a habit moving slowly between the kitchen and the bar after closing, hood always raised, footsteps never heard. Nobody has seen his face. According to the house's own legend the monks never entirely left, and one of them stayed behind to guard a treasure sealed into the walls when the monastery was dissolved — which is why he appears most often near the cellar stairs and the old vaults. The cooks describe him as calm, but say the cold in the room always arrives just before he does.
